Winemaking
The fruit was pressed then underwent malolactic ferment to create a big full bodied buttery palate. Indigenous yeast was used, and the juice was stirred at the end of ferment before extended time on lees helped build additional palate weight. The wine was sulphured and then blended prior to filtration and bottling to retain the fresh fruit flavour and allow the oak to develop further in bottle.
