Well integrated oak drives the palate forward harmonizing with the fruit to ensure a soft silky texture, fine tannins and wonderful persistence.
Winemaking
Destemmed then fermented with some whole berries, fermented in open top fermenters with select yeast strains. It was pumped over daily and spent 14 days on skins then went through malolactic fermentation naturally. 12 months in oak gave addition complexity but varied age of oak ensured fruit flavours were still the core driving force. The wine was blended and then filtered prior to bottling.
